We had a lovely Christmas this year! Helen is really starting to get into the spirit of the holidays and seeing it all through her eyes is wonderful.
On Christmas morning I made a special breakfast before we opened gifts by the tree. We all love pancakes and lately I've been experimenting with a buckwheat version. I love how the buckwheat adds a nut flavor and makes the texture more interesting.

Special Occasion Buckwheat Pancakes
1 cup all purpose flour
1 cup buckwheat flour
2 teaspoons baking soda
1 teaspoon baking powder
2 tablespoons sugar
1/4 teaspoon salt
1/2 teaspoon vanilla
1 1/2 cups mild
2 tablespoons apple cider vinegar
2 tablespoons melted butter (more for frying)
Mix all ingredients together in a bowl in the order listed. Let sit for 10 minutes. Cook with butter on a hot griddle until bubbly on the edges. Flip and cook completely on the other side.
Apple, Blueberry, Walnut Topping
2 tablespoons unsalted butter
2 firm apples cored, peeled and cut into 1" chunks
1 pint blueberries
1/2 cup walnuts whole
heat butter in cast iron skillet until bubbly and slightly brown. Add apples and cook on med/high until apples begin to brown. Stir and cook until apples are all slightly brown. Lower heat to medium. Add blueberries and cook until blueberries begin to burst. Turn off heat and add whole walnuts. Serve over pancakes with more butter and warmed syrup.
