Cooking With Wood

You may remember in the early spring I posted about wanting to try my hand at cooking over a wood fire in the BBQ pit. Well, this weekend it happened!

We had friends visiting from Boston and spent an evening outside tending to a fire, drinking a few beers and cooking meat! Everything turned out beautifully, but it is a tricky, and very long process. Two things we learned: you need more wood than you think you do and it will take substantially longer than you think it will.

The cooking method did impart an amazing flavor to the meat and was well worth the effort. The ribs (which I simply coated with sea salt and pepper) were a big hit! I think next time I'll try this Salt and Pepper Baby Back Rib Recipe from Food 52.
