We are big into breakfast here at Goss House! So with the new year I'm making sure we start each day with some awesome tasting, and still healthy recipes. I have three go-to's that everyone loves. I thought I'd share them with you because they are all good for you, but don't skimp at all on big taste.
Savory Oatmeal Bowl with Soft Boiled Egg, Avocado and Nuts
I love a good savory oatmeal for breakfast in the winter. I cook the oatmeal using half water and half milk with a pinch of salt. While it cooks, I soft boil an egg. When everything is ready, spoon oatmeal into a bowl, top with egg, sliced half an avocado and mixed nuts and dried fruit. Done!

Sauteed Kale with Salted Dates and Fried Egg
I loved this dish when I was pregnant with Helen and it has continued to make an appearance regularly at our winter breakfast table. Heat olive oil in a pan and saute one head of garlic thinly sliced. When soft, add chopped kale and saute until wilted. Remove to plate. Add a bit more oil and saute two dates until blistering. Add to kale and sprinkle with sea salt. Fry an egg in olive oil over-easy and place on top of kale/dates. Grind black pepper over entire thing and enjoy!
